Gluten-free Peanut Butter Cookies

Ingredients

  • 1 cup Peanut Butter
  • 1 cup Granulated Sugar
  • ½ cup Brown Sugar (can sub Coconut Sugar if prefer)
  • ½ cup Unsalted Butter softened (vegan butter for dairy free)
  • 1 tsp Vanilla Extract
  • 2 Eggs whole
  • 1.5 cups Gluten Free Flour 1 to 1
  • 1 tsp Baking Soda
  • ¼ tsp Salt

These delicious cookies are made with only a few ingredients and take only a few minutes to make! They’re also naturally grain-free and can be made dairy-free.

Let’s Make Some Cookies

Instructions

  1. Preheat the oven to 180 degrees celsius 
  2. In a large mixing basin, blend the peanut butter, softened butter (or vegan butter), and sugars with a hand mixer until smooth (about 2 minutes)
  3. Mix in the eggs and vanilla essence until everything is well blended.
  4. Combine the gluten-free flour, baking soda, and salt in a separate basin. Whisk to blend, then pour into the wet ingredients’ basin.
  5. Fold the wet and dry ingredients together with a rubber spatula until fully combined, then scoop out dough and roll it into a ball using a cookie scoop. You should be able to collect around 24 total.
  6. Place the balls on a parchment paper or silicone mat-lined baking sheet and use the back of a fork to gently push the tops of each ball down (vertical and horizontal) to create the iconic criss-cross pattern (can sprinkle granulated sugar on top if desired)
  7. Bake for 11-13 minutes, being cautious not to over-bake because you want the insides to be soft and chewy. Allow them to cool on a wire rack. Place in an airtight container or zip-lock bag to keep fresh.

 

Recipe Tips and Tricks: 

Baking times vary depending on altitude and oven.

You don’t want to overcook them; they should be gently brown on the bottom.

Remove them from the baking pan after they have cooled.
