  • 250g Lovemore digestive biscuits
  • 300g dark chocolate
  • 100g butter
  • 140g golden syrup
  • 1tsp vanilla extract
  • 100g raisins
  • 100g mini chocolate eggs
  • 50g white chocolate

With Easter in just a few weeks, we wanted to come up with a deliciously festive treat for you to make! If you’re looking for a fun Easter activity that the whole family can enjoy, this recipe is perfect. An alternative to traditional holiday bakes, these crunchy, chocolatey fridge cakes are easy to make, deliciously indulgent and entirely gluten free!

To begin your tasty Easter treats, melt the chocolate, butter and syrup in a glass bowl over a pan of simmering water. Stir this occasionally until it’s reached a smooth and glossy consistency and then take off the heat.

Next take your Lovemore digestive biscuits and break these up into fairly small pieces. Don’t crush them, as you want the finished cakes to be nice and crunchy! Add the vanilla extract, biscuit pieces and raisins into the melted chocolate and mix well until everything is completely coated.

Line a tin with baking parchment and tip your delicious mixture in, making sure to flatten it down with the back of a spoon so you’re left with an even surface.

Press some of the mini chocolate eggs into the top (as many as you like!) and then pop the tin into the fridge until it’s set.

When the mixture has gone hard, melt the white chocolate and drizzle this over the top and set in the fridge once more.
